Healthy Recipes for a Healthy Diet
Who doesn’t love a summer cookout or picnic? You can still enjoy the foods you love and maintain your healthy diet. To make eating a nutritionally balanced diet a little easier, here is a delicious and healthy recipe to add to your recipe book!

Grilled Lemon Chicken
Ingredients:
3/4 cup freshly squeezed lemon juice (4 lemons)
3/4 cup extra-virgin olive oil
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
1 tablespoon minced fresh thyme leaves (1/2 teaspoon dried)
2 pounds boneless chicken breasts, halved and skin removed

Directions:

  1. Whisk together the lemon juice, olive oil, salt, pepper and thyme.
  2. Pour over the chicken breasts in a non-reactive bowl. Cover and marinate in the refrigerator for 6 hours or overnight.
  3. Heat a charcoal grill and cook the chicken breasts for 10 minutes on each side, until just cooked through. Remove to a plate, cover with plastic wrap, and cool.
