Jenny Craig Chocolate Thumbprint Cookies
Makes 48 cookies
3/4 cup Nestlé semi-sweet morsels
1 -1/3 cups sugar, plus additional for rolling
2 Tbls nonfat milk
2 cups all-purpose flour
1/2 tsp salt
1 cup butter or margarine, softened
2 egg yolks
2 tsps vanilla extract
2/3 cup Cocoa
Orange filling (recipe below)
Beat butter, sugar, egg yolks, milk and vanilla in large bowl until well blended. Stir together flour, cocoa and salt; gradually add to butter mixture, beat until well blended. Refrigerate dough 1 to 2 hours or until firm enough to handle. Prepare orange filling (recipe below).
Heat oven to 350° F. Lightly grease cookie sheet. Shape dough into 1-inch balls; roll in additional sugar. Place on prepared cookie sheet; press thumb in center of each cookie. Bake 10-12 minutes or until set. Spoon about 1/4 tsp filling into thumbprint of warm cookies. Gently press chocolate morsels into center of each cookie. Carefully remove from cookie sheet to wire rack and cool completely.
Orange Filling: Combine 1 cup powdered sugar, 2 Tbls softened butter or margarine, 4 tsps milk, 1/2 tsp freshly grated orange peel and 1/2 tsp vanilla extract in small bowl; beat on high speed until smooth. Stir in food coloring to get desired holiday color (optional).
